COCONUT FLOUR BARS

Ingredients
- ¼ cup (4 tablespoons) melted coconut oil 
- ⅓ cup maple syrup or honey 
- 2 eggs, slightly beaten 
- ¼ cup unsweetened almond milk 
- ½ cup coconut flour 
- ½ teaspoon baking soda 
- ¼ teaspoon salt 
- 50 grams dark chocolate, broken into chunks or coarsely chopped 
- ½ cup coconut flakes 
- 1 tablespoon cacao nibs (optional) 
We cut these into 6-8 bars — they’re small but filling.
Method
- Preheat oven to 350°F. 
- Grease a standard size loaf pan using a bit of coconut oil. 
- In a large bowl, whisk together coconut oil, honey, eggs, and almond milk. 
- In a medium bowl, mix together coconut flour, baking soda, and salt. 
- Add dry ingredients to wet ingredients and mix until just combined and batter is smooth. 
- Fold in coconut flakes and chopped chocolate. 
- Tap loaf pan to get the batter to settle evenly. Gently smooth out the top as required. 
- Sprinkle cacao nibs on top, if using. 
- Bake for 25 minutes or until edges are golden brown and a toothpick comes out with a few crumbs attached. 
- Let cool completely and carefully cut into bars. They’re a bit crumbly but oh so delicious!
