INSTANT POT GREEN LENTILS

Ingredients
2 teaspoons olive oil
½ small onion, diced
1 clove garlic, minced
1 cup green lentils
2 cups water, chicken, or vegetable broth
Onion powder to taste (optional)
Garlic powder to taste (optional)
½ teaspoon cumin (optional)
½ teaspoon kosher salt
Method
Start Sauté function on Instant Pot on the hottest setting and wait for the indicator to show HOT.
Add the oil and onion. Cook until soft, about 3 minutes.
Add the garlic and cook until fragrant, about 2 minutes.
Add the lentils, water or broth, and salt.
Cook on high pressure for 15 minutes + 10 minutes natural release.
Remove the lid, stir the lentils, and adjust salt to taste.
Serve as a delicious and healthy side dish. This goes great with the Cheater’s Duck Confit recipe!
