INSTANT POT GREEN LENTILS

Ingredients
- 2 teaspoons olive oil 
- ½ small onion, diced 
- 1 clove garlic, minced 
- 1 cup green lentils 
- 2 cups water, chicken, or vegetable broth 
- Onion powder to taste (optional) 
- Garlic powder to taste (optional) 
- ½ teaspoon cumin (optional) 
- ½ teaspoon kosher salt 
Method
- Start Sauté function on Instant Pot on the hottest setting and wait for the indicator to show HOT. 
- Add the oil and onion. Cook until soft, about 3 minutes. 
- Add the garlic and cook until fragrant, about 2 minutes. 
- Add the lentils, water or broth, and salt. 
- Cook on high pressure for 15 minutes + 10 minutes natural release. 
- Remove the lid, stir the lentils, and adjust salt to taste. 
- Serve as a delicious and healthy side dish. This goes great with the Cheater’s Duck Confit recipe!
