OMELETTE BITES
Adapted from Gina’s recipe.
Ingredients
- 6 large eggs 
- 1 tablespoon of water or milk 
- A handful of shredded cheese 
- A handful of diced bell pepper 
- A handful of diced ham 
- Salt and pepper to taste 
Makes 12 omelette bites.
Method
- Preheat oven to 350°F. 
- Add the water or milk to the eggs and beat until mixed. The liquid helps to create a more fluffy texture. 
- Add the cheese, bell pepper, and ham to the eggs and mix. 
- Portion out the egg mixture into 12 regular muffin cups. I use silicone cups as this recipe is prone to sticking but you can also use a well-greased muffin tin. 
- Bake for 20–25 minutes or until set. 
- Let cool slightly (these will be very hot) and enjoy! 
Notes
- This recipe is very versatile! You can change up the ingredients as you would with any omelette.
